Crafted and blended by hand, Distiller’s Cut Rum Batch 2 is the second of a new small-batch series from Trevethan. Each release is limited to just 250 bottles and showcases a unique flavour profile shaped by carefully selected oak casks and methods.
Batch Two is aged once again in ex-Oloroso sherry quarter casks, Batch Two carries the same foundation as our first release, but nature had a bigger hand in shaping this expression. Fermented during an unusually warm Cornish summer, with no added heat or intervention, the rum developed with temperatures far closer to those of the Caribbean. This slower, naturally warmer fermentation allowed the yeast to fully express its fruit esters, giving Batch Two a brighter, more tropical character than its predecessor.
The result is a richer, more layered rum that still champions balance and finesse, hallmarks of Trevethan’s approach to dark spirits.
Nose: Orange and a gentle wisp of smoke, rounded by almond and soft cream.
Palate: A burst of orange with hints of cherry and pineapple, evolving into smoky spice. Waves of caramel and warming ginger carry through towards the finish.
Finish: Longer and more expressive than Batch One, with deeper fruit notes accompanying the ginger warmth.
